A New Endeavor & Cheesy Shrimp N Grits

I am officially a Crossfitter :)  I completed my Elements and my first true WOD (see below).  For more information on Crossfit check out this site and the Crossfit 1836 site.  No, I did not break up with Francis.  However, now I have a workout planned for me every day of the week...no excuses!

This picture is going on my motivation board to remind me to correct my form!
Crossfit encourages following the Paleo and Zone Diets.
What this means in plain terms from the Crossfit website is:
You should base your diet on garden vegetables, especially greens, lean meats, nuts and seeds, little starch, and no sugar. That's about as simple as we can get. Many have observed that keeping your grocery cart to the perimeter of the grocery store while avoiding the aisles is a great way to protect your health.

I am not ready to give up my oats and dairy QUITE yet.  However, I am going to continue my research and look up some Paleo recipes and try a 28 Day Challenge May 1-28.  I am writing it down here, so I have to do it :)

The recipe below is adapted from my friend Jessica's recipe for Cheesy Grits.  I LOVED this recipe and am going to have to cook it once more before I try going Paleo :)
Cheesy Shrimp N Grits (Serves 4)
8 strips of bacon
Four servings of yellow corn grits
1 C Parmesan cheese
2 cups of arugula
1 lb shrimp
EVOO for drizzling
 Directions
·        Bake bacon at 350 on foil lined baking sheet until very crisp. Remove from oven, drain on a paper towel, let cool, and then crumble.

·        Season shrimp with garlic salt and pepper.  Sauté in pan until opaque.  Set aside.

·        Prepare grits as directed by package. Stir constantly to keep creamy consistency.

·        When grits are about 5 minutes from done, stir in cheese and bacon.

·        Remove from heat and add arugula. Cover with lid and let stand for three minutes.

·        Divide grits evenly among 4 bowls.  Top with shrimp and fresh Parmesan.

That's all for now...Peach, Out!

  1. Your Blog kicks ass. love the enthusiasm and effort. Wish more people took on their fitness, and even more so, Health with such energy... just throwing my 2 cents out as usual though. You can never go to low on your squats as long as you're keeping a strong lumbar and big chest. www.health-bent.com is a good Paleo site as well.
